Residents atSanctuary Care homes will taste mouth-watering dishes prepared by four of the organisation’s chefs after they won pride of place on its Queen’s Jubilee menu.
Marcella Field, from Oxfordshire’sWatlington & District Nursing Home, Daniel Perks and Chris Hill fromThe Rosary Nursing Home in Bridgwater and Ian Harris fromIvydene Nursing Home in Ivybridge all entered winning recipes into the organisation’s culinary contest.
Their dishes will now star on Sanctuary Care’s Queen’s Jubilee Celebration Menu, to be prepared in its 47 care homes on Monday 4 and Tuesday 5 June.
Two of Marcella’s dishes got taste-buds tingling. Her Celebration Soup starter is a blend of Bramley apples, cheddar cheese, celery and onion, and her Royal Bacon Clanger main is a pastry filled with bacon, leeks, onion and sage, served with a rich chive sauce.
She said: “To win a place for one dish to appear on the menu was great but to win two was just fantastic.”
Ian’s Jubilee Queen of Puddings is a meringue with a creamy raspberry biscuit base.
Another winning pud was Chris’ strawberry shortbread stack. He said: “The competition was brilliant and the residents here are really excited about getting to try my dish.”
His colleague Daniel, who prepared a starter of mini haddock fishcakes, with watercress and homemade tartar sauce, said: “I was really pleased that my dish got through and our residents are really proud of me.”
Karl Evans, Sanctuary Care’s Hotel and Catering Services Support Manager said: “The quality of the winning menu shows how talented and creative the chefs in Sanctuary Care’s homes truly are. The winners not only embraced the theme of celebration, but included seasonal foods which our residents love.”
The winners all submitted written recipes, which were judged on innovation, nutrition, balance and of course taste, before they cooked them at sponsor Unilever Food Solutions’ head office in Surrey on Wednesday 18 April.
As well as meeting the criteria above, they also had to include a key ingredient - Meadowland Cream - produced by Unilever Food Solutions.€¹
